Enjoy Colorado Apricots

Enjoying fresh fruits and vegetables is one of delights of summertime. Now the Western Slope’s Apricots are ready as Colorado Department of Agriculture Marketing Specialist Wendy White shares
White: “We are really excited. The fruits of the Western Slope are coming in season. We had cherries last week, apricots are starting to come in and even Palisades peaches are making an appearance a little early this year. So we are excited to see all of our wonderful fruits from the Western Slope.”
You want to choose apricots that are plump, firm and uniformly colored. Apricots are low in fat, sodium free and an excellent source of vitamins A and C. White gives more details about the state’s fruit industry.
White: “Apricots are a smaller part of the fruit industry in Colorado. Typically peaches and apples are the bigger segments of fruit production in the state but we also grow the apricots, cherries, pears and those kinds of tree fruits.”
Look for Colorado apricots at your local grocery store, farmers’ market or at restaurants across the state. Need ideas of new ways of trying Colorado’s bounty? White adds
White: “We have a great resource on our website with a variety of recipes using Colorado ingredients. Whether it is apricots with our Thai Apricot BBQ Sauce recipe that we are featuring this month or any other ingredients that are grown in Colorado. We have entrees, desserts, side dishes, appetizers so there is hundreds of recipes on the coloradoagriculture.com website.”
