Give Thanks for CO Potatoes

Well another month has begun and with it the Colorado Department of Agriculture is featuring an different commodity that is grown in the state. November highlight’s Colorado potatoes as Colorado Department of Ag’s Marketing Specialist Wendy White shares
White: “Well, it’s November so the holiday’s are just around the corner and it is time to start preparing your menu for Thanksgiving. We’re are featuring Colorado potatoes ing this month’s recipe which is Colorado mashed potatoes — a perfect side dish to any Thanksgiving feast.”
White continues with more information about the state’s potato industry.
White: “Well Colorado continues to be one of the top producers of potatoes in the nation. We are the fifth largest producer in the United States. We produce over 2 billion pounds of potatoes every year. The great thing about Colorado potatoes is we have a wide variety of types available — the regular Russets and Yukon Golds that people are familiar with. But we also have a lot of specialty potatoes like the Purple Majesty and French Fingerling and some of those really unique varieties that people can play around with in their recipes.”
Potatoes are fat free, sodium free and are high in potassium and Vitamin C. Look for Colorado potatoes at your local grocery store or at restaurants across the state.
