Kick Up Your Queso with Colorado Buffalo

January’s Colorado Proud program highlights colorado buffalo with its Buffalo Queso dip. Colorado Department of Ag’s Marketing Specialist Wendy White shares more details
White: “Well, January is still pretty cold so it is a good time for some good queso and a great way to kick up your queso is with Colorado buffalo. So the recipe this month is a great queso dip that combines cheese, bacon and then gets some buffalo in there. It is a really party pleaser. And the Broncos made the playoffs so this is a great dip to make and sit down in front of the tv on a cold day and watch some football.”
The American bison is the largest land mammal in North America, and there are 340,000 bison across the continent. Buffalo is a source of protein, vitamins B6 and B12, iron as well as other vitamins and minerals. Look for Colorado buffalo at your local grocery store or at restaurants across the state.
