Colorado State University-Bred Crimson King Red Potatoes in Demand

While at the recent Potato Expo, I stopped by the Colorado Certified Potato Growers Booth to check in with Manager Preston Stanley. He introduced me to Crown Quality Concepts King Stratton who has the exclusive marketing rights to the very popular Colorado State University bred Crimson King a chipping red potato.

Stratton: "I have received many samples, but I selected this one because I thought it is so interesting in the color pigmentation. I thought it might have a market — and surely it does. We can't keep up with the demand originating in the marketplace. We're excited about it. I'm happy to be able to work with the University. I supported the plank patenting process on it and in turn they gave me the exclusive license agreement to market it. We're on our third year of production and we double each year. Although it is a very, very small segment of the total industry. It is perhaps the fastest growing variety within the chip industry because of the unique color and its ability to hold its color during the fry process and it tastes good too."

This chip has been used in a patriotic potato chip product that it is in high demand around Flag Day and the Fourth of July.
