Colorado Proud January Recipe Features Potatoes

Each month, the Colorado Department of Agriculture features a different commodity to highlight the variety and quality of products grown, raised or processed in the state. Colorado Department of Agriculture Marketing Specialist Wendy White shares more about this month's featured commodity

White: "Well, February is Potato Lovers Month so it is the perfect time to celebrate Colorado's super tuber. We have a Smokey Gnocchi recipe that utilities Russet potatoes. It is a stove dumpling usually made with potatoes and it is an interesting way to utilize Colorado potatoes."

Did you know that potatoes pack more potassium than any other item in the produce section? They are fat free, sodium free and also high in vitamin C. White says this recipe would be a perfect dish to serve at the big game.

White: "It's absolutely a great addition to your Super Bowl festivities. Really encourage you to get out there and try it. Colorado produces most of their potatoes in the San Luis Valley but also in Northeastern Colorado. We grow 70 different varieties around the state."

White says that February is a busy month with many events happening around the state.

White: "So we have the Market Ready training that the Department of Ag is hosting in Brighton at the Adams County Fairgrounds to help food and agricultural businesses grow their businesses. That's February 15th and 16th. Then we have the Colorado Fruit and Vegetable Growers Association annual conference on February 21st. Then the Governor's Forum on Colorado Agriculture on February 22nd. We have information about all of those events on our website at coloradoproud.org"
