Colorado Proud March Recipe Features Lamb

Each month, the Colorado Department of Agriculture features a different commodity to highlight the variety and quality of products grown, raised or processed in the state. Colorado Department of Agriculture Marketing Specialist Wendy White shares more about this month's featured commodity

White: "Well, this is a really exciting month. We've got Colorado lamb that we are featuring which is perfect for holidays around Easter time. The recipe is a Leg of Lamb Middle-Eastern style. It is actually a pretty simple recipe featuring Colorado lamb that is always very popular. Our lamb is well-known worldwide for the high quality that we produce here in the state. Colorado actually ranks third in the nation for sheep and lamb production. We have about 430,000 plus head of lambs in the state."

The wine pairing suggested for this lovely leg of lamb recipe is Syrah form Bookcliff Vineyards in Boulder. Lamb is an excellent source of protein, Vitamin B-12, niacin, zinc and is a good source of iron. You can find Colorado lamb at your local grocery store, farmers' market or on the menu at restaurants across the state. White continues with other news

White: "Actually farmers markets started up this week believe it or not. Boulder County's Farmers Market started on April first. We do have a list of all the farmers markets across the state on our website at coloradoagriculture.com. They will be steadily opening over the next month or two."
