Colorado Ag Department sends love to potatoes

February is a month for lovers... of Colorado potatoes and potato producers.

The Colorado Department of Agriculture is sending its love to farmers, producers as part of the Colorado Proud program and Colorado Department of Agriculture's Wendy Lee White says they've come up with a heartwarming recipe to help show your love.

"February is potato lovers month so what better way to say I love you to your sweetheart than with Colorado potatoes. Colorado produces more than 2 billion pounds of potatoes ever year and we're the fifth largest producer of potatoes in the nation. Our recipe this month is a Colorado mashed potato enchiladas recipe. It's really good. You can make the mashed potatoes fresh and then put them in the enchiladas or if you have leftover mashed potatoes it's good for this recipe too."

The CDA has a very busy calendar in February. Among the many events are:

On February 13th the Colorado Food and Agriculture Entrepreneur Workshop will cover the fundamentals of establishing a food focused business. Experts will share resources available for start-up businesses, building your brand, working with retailers, and other key topics such as labeling and beginning production factors. This is designed for start-up businesses and individuals considering a path into the food product and agricultural industry!

The 2019 Farming Evolution Conference will be held February 20 & 21. Topics covered include how to build new top soil, the connection between soil variability and precise crop inputs, managing Herbicide Resistant Weeds and using drones in agriculture. There will also be a producer panel to share their no-till/soil health journey.
