Carton prices for large potatoes have nearly doubled in recent weeks and I called Idaho Potato Commission President and CEO Frank Muir. "It really comes down to supply and demand. As we are getting through the season we are seeing fewer and fewer of the larger size potatoes and, so as would be expected prices are rising. We also have quality, large size potatoes that our chefs and futures operators can select from this season so I think the higher prices are definitely warranted. So good news for the potato state, potato producers and the Idaho Potato Commission. That's right our big potatoes are being celebrated all over the country.”
