Water makes up 93% of the delicious vegetable spears we know as asparagus. Imagine this, it is a member of the lily family. This little green delight is free of fat and cholesterol and is also low in sodium. Tremendous source of vitamin B6, calcium, magnesium and zinc. It is also an extremely good source of dietary fiber, protein, beta-carotene, vitamin C, vitamin D and vitamin K. The crop is on in southwest Idaho.

Bonnie Magnuson is describing her Asparagus crop for this year. Her stalks are from a virgin field. When you look at the field from a very wide perspective, the crop looks scarce. But don't let your eyes betray you because up close it is tall and strong. It is also early. “Yes the spring did come early. But look how beautiful the crop is.”

 

This region of Idaho has experienced a warm dry spring allowing the early arrival. Switching gears to Sunnyside Farm outside New Plymouth, the Leaf family has sold asparagus for years. This year’s price, a very attractive dollar $1.80 per pound. The roadside stand should have plenty for sale until the harvest ends around 1 June.
