Wyoming Women's Antelope Hunt spokesperson Rebekah Smith told me about a meal everybody shared at this year's event. "We used the back straps of one of the hunters antelopes. She harvested it and donated it to the cooking class. They actually made the Vietnamese dish pho. The chef has often done a cooking demonstration for us and she used a recipe from our very first antelope hunt in 2013. The recipe and dinner were a huge success. I tried some and it was really delicious in fact I was blown away by how good it is. It was a really good opportunity to show our hunters that it is not only fun to hunt the antelope but to process, cook and eat the meat. A lot of people don't think that antelope tastes good but I can tell you it's delicious. Of course the backstrap is the choice cut for any animal but this was delicious.
