I'm Susan Allen with today's Land and Livestock Report. Today's consumers, especially millennials want to know more about what they're buying, and certainly what they're eating . There's actually a term for what they want to know. Leann Saunders of the verification company Where Food Comes From Inc. talks about it

SANDERS: Credence attributes are those things that a when a consumer picks it up in the packaging case she can't determine with the eye. It moves beyond price, packaging color product to things like how are the animals treated, whats the environmental impact. So all those questions consumers have today about how their food was grown and how it gets to them.

With the majority of people being removed from agriculture it has increased demand for the full story, to the point that buyers will pay more for it. That gives producers a chance to put more dollars in their pockets

SANDERS: The great opportunity today we have in the beef industry is that consumers want choices. And they want transparency, and they want information. There isn't one size fits all so that provides great opportunity for each producer to take a look at what they really want to do.

As a baseline, Saunders says proven, quality genetics are essential. Then it's about record keeping and opportunities to build...tape

SANDERS: So if I'm a cow-calf producer I am always thinking about the demands of the consumer. Because we are a segmented supply chain we have to know they want to deliver because they don't have to buy our product.

Added dollars come from thinking beyond the ranch.
