Retail vs. Food Service for Beef Cuts

Hi everybody it's time for your Wednesday Agri Beef Minute here on the Ag Information Network of the West-I'm Russell Nemetz.

In the beef industry, different cuts of beef sell differently when comparing food service and retail. But as Dave Murphy, National Sales Manager for Agri Beef explains, we've seen quite a bit of merging happening between the two competing for the same cuts.

"Over the years, retail has traditionally been your roasting cuts while food service has been your steaks. And thru economic pressures, the retail when the economy was a little tight got into the food service cuts because people still wanted to have a good steak but just eat it at home because of financial pressures. And that has stayed there."
