April Salutes Colorado Spinach

This month, the Colorado Proud recipe showcases Colorado spinach. Colorado Department of Ag’s Marketing Specialist Wendy White shares more details
White: “Well, we are getting really excited. The weather is changing and getting warmer and we’re seeing a little bit of green out there. One of the first greens we see is spinach. So that is what we are featuring for April and it isn’t just for Popeye. Everyone can enjoy spinach. It’s high in vitamin A and C, iron and foliate so it is really healthy and nutritious. We have a spinach artichoke fondue recipe on our website that people can enjoy.”
In addition to the spinach and artichoke, this delicious fondue also includes roasted red and jalapeño peppers. light beer and gouda, asiago and parmesan cheese.
White: “In Colorado we harvest more than 1,000 acres of spinach each year. It is found all over but probably primarily in the northeastern part of the state. But the Farmers Markets have started — Boulder Farmers Markets just started this past weekend. So it is an item you will see popping up at your Farmers Markets and grocery story.
